Chicken dippers with Gavottes

Ingredients
- 3 chicken breasts
- 1 egg
- 40 g breadcrumbs
- 30 g plain Gavottes
- 1 tablespoon flour
- 5 cl sunflower oil
- 30 g salted butter
- 200 g 0% fat fromage blanc
- 1½ bunches chives
- freshly ground pepper
- salt
Preparation
- Cut the chicken breasts into thin strips. - In a bowl, beat the egg with a pinch of salt. Pour the mixture onto a plate. - On a second plate, combine the flour, breadcrumbs, crumbled Gavottes and pepper (chilli pepper optional). Mix. - Coat the pieces of chicken in the beaten egg then in the breadcrumb mixture. Repeat. - Heat the oil and butter in a frying pan, seal the chicken then lower the heat and cook for 5 to 8 minutes.
For the fromage blanc sauce:
- Wash and chop the chives. - In a bowl, mix the fromage blanc with salt, pepper and chives. - Pour the sauce into ramekins
Serve immediately.
