Gavottes mille-feuilles with apples and black pudding

Ingredients
- 1 black pudding
- 1 large sheet filo pastry
- 2 apples (Cox’s Orange Pippin for example)
- 40 g salted butter
- 20 g brown (or caster) sugar
- salt
- freshly ground pepper
- 1 pinch of hot chilli pepper
Preparation
- Preheat the oven to 180°C - Crumble the Gavottes. - Wash the apples and cut into 1 cm slices. - Slice the black pudding. - Cut the filo pastry into circles. - Melt 15 g of butter and brush the filo pastry. Season and sprinkle with chilli and pepper. - Bake in the oven until the disks begin to colour. - Melt 25 g butter in a frying pan and cook the apple slices. They must be soft but retain their shape. Keep warm. - Cook the black pudding in the same pan as the apples. - Build the mille-feuilles with alternating layers of apple, black pudding, Gavottes and filo pastry.
Serve with an aperitif or as an appetiser.
Suggestion: Vary the recipe by using white pudding.
